You may be familiar with a popular pub drink known as the Black and Tan made with Bass Pale Ale and Guinness Stout. A beer mug is filled half full with ale then a pour of stout is spooned slowly over the top until the glass is full. If done correctly the Guinness will stay on top and the Bass on the bottom resulting in a layered drink colored dark and light, Black & Tan.
My version has nothing to do with beer but with my favorite Italian espresso drink, a latte macchiato. Made in a tall glass, a pour of espresso is added to foamed milk, that if done right creates a layered drink, you guessed it – Italy’s Black and Tan.
